Pizza With Prawns

Serves: 2
Preparation: 10 minutesIngredients:
250g Cheese (grated)
½ Bloomer or large loaf bread
2 Tomatoes
2 Garlic Cloves
2 Small onions
10 Olives
3 tsp sweet corn (boiled)
1 tsp freshly chopped oregano
10 Fresh Basil leaves
10 Large prawns
Olive oil
  • Make sauce first and start by de-seeding tomatoes.
  • Blend chopped tomatoes, oregano, garlic, 1 tsp olive oil.
  • Season with salt and pepper.
  • Cut bloomer bread through to the middle to end up with two large flat halves.
  • Spread tomato sauce generously and add grated cheese on top.
  • Add sliced onion, olives and sweet corn.
  • Place prawns resting on basil leaves to combine the flavour whilst cooking.
  • Drizzle with olive oil and put under the grill for 5 minutes.
  • Ready to serve.

Scallops Fish Curry

Preparation: 8 minutesIngredients:
200g Fresh Scallops
50 ml Coconut milk
4 Table spoons of white wine
1 Sweet red pepper
1 Onion (chopped)
1 Garlic clove
1 Chili (medium strength)
1 Bay leaf
1 tsp paprika
1 tsp turmeric
½ tsp curry powder
Olive oil
Salt and Pepper


  • Marinate scallops with wine, turmeric, paprika, curry powder finely chopped garlic and de-seeded chili and sweet pepper.
  • Season with salt and pepper.
  • Add bay leaf, 1 table spoon of olive oil and chopped onion to a pre-heated pan and stir until soften.
  • Stir in gently the marinated scallops for 30 seconds on high heat and then pour the same wine used for marinating .
  • Add 100 ml water and stir.
  • Allow the sauce to reduce and add coconut milk. Turn heat down and stir regularly for 2 minutes.
  • Serve with green salad.

You may wish to check the strength of chili before cooking this curry recipe.  If you prefer extra heat, you can also use chili seeds.
After eating curry, you can refresh your pallet by eating a spoon of yogurt before having your next drink!

Prawn Stir Fry With Mash Potato

Preparation: 25 minutesIngredients:
20g Fine green beans
300g Fresh uncooked prawns
100ml Semi skimmed milk
1 Table spoon butter
1 Table spoon olive oil
4 Small potatoes
1Medium carrot
¼ tsp Nutmeg
1 tsp Soy sauce
1 tsp Rice vinegar
2 Garlic cloves
Salt and pepper
  • Peel and boil potatoes for 5 minutes. Drain and mash manually until smooth (do not blend for a smooth but rustic texture).
  • Add milk, nutmeg, butter salt and pepper. Stir and leave to one side.
  • Finely chop garlic and stir fry with prawns and olive oil.
  • On high heat add fine green beans rice vinegar, soy sauce, salt and pepper.  Stir gently for about 2 minutes.
  • Take off the heat and grate carrot.  Leave to one side.
  • Using small bowl, brush with olive oil and fill with mash potatoes.
  • Place against middle of serving dish and shake gently until mash sits on the plate.
  • Place stir fried prawns and beans around the plate and add grated carrot on top of the mash.
  • Ready to serve.

Potatoes eaten in moderation are non fattening, great source of carbohydrates, potassium and fibre.  Good for the heart and to help lower blood pressure.  This ingredient contains chemical Kukoamines which is said to improve sleep disorder.

Green beans lower blood pressure, promote a healthy heart and bones.
This ingredient contains antioxidants to help balance cholesterol levels.
Also it is low in calories however it is high source of energy.

Prawn Fish Cakes

Preparation: 1 hourIngredients:
200g Large peeled Camaroes (prawns)
300g Plain flour
500g Milk
200 g bread crumbs
1Table spoon butter
1 Table spoon Salt
25g Fresh Parsley
1/2 Red sweet pepper
   2 Eggs
1 Onion
2 Garlic cloves
1 tsp paprika
200ml Olive oil


  • To a large bowl, add 2 cups of flour (250g), 1 table spoon salt and butter and mix well by hand.
  • Add 4 table spoons of warm water and keep mixing.
  • If to dry after mixing for 2 minutes, add another 3 table spoons of warm water.
  • Keep folding and massaging mixture until it forms a dough consistency.
  • Cover the bowl and leave to rest in a dark cupboard.
  • Meanwhile make the filling sauce.
  • Peel and chop onions, garlic, and prawns finely.
  • Stir fry on high heat until onions soften.
  • Add paprika, chopped pepper, parsley, milk and 1 table spoon flour.
  • Mix well turn heat down to medium high.
  • Regularly stir for about 10 minutes, add more milk if sauce dries out to quickly.
  • Season with pepper and take off the heat, allowing sauce to cool down.
  • Onto a clean flat surface, dust with flour.
  • Roll half of the dough as thin as possible (3mm).
  • Cut circles (15cm diameter). Roll remaining dough and cut circle until dough runs out.
  • Lightly brush around circles with olive oil (this will help seal).
  • Add 1 table spoon in middle of each circle and fold in half.
  • With a fork press the end to seal the pastry.
  • Beat 2 eggs and in a separate plate have bread crumbs ready.
  • Dip each parcel into egg, then cover with bread crumbs.
  • Repeat until all parcels are ready to fry.
  • Add 200ml olive oil to frying pan on high heat.
  • Fry parcels 30 seconds on each side (about 5 parcels at the time to make it   easier to remove quickly from high heat without overcooking it).
  • Serve hot with rice or chips.

Also delicious as a cold snack with bread.  This recipe makes aprox. 15 parcel prawn fish cakes, these can be made in advance and kept in the freezer for up to 2 weeks.
If freezing, do not dip in egg and breadcrumbs. Once sealed, parcels can be placed in closed container and put in the freezer.

These fish cakes can be prepared in advance.  A great snack or picnic recipe suggestion.
